What I want to make clear is that this company's success is due to our team focused environment and we wouldn't be where we are without each and every one of them.

Please introduce yourself to our readers.

We are Short North Piece of Cake and have been in the Wedding Cake business for 20 years. Started out as a small business of 2 people with a love for baking in 1998. The Short North Arts District has developed and grown so much over the past two decades and we are proud to call this arts-focused district our home. I'm Laura Harter, owner, and I've been with this wonderful bakery for more than 10 years and purchased it almost 6 years ago from the original owner. What I want to make clear is that this company's success is due to our team focused environment and we wouldn't be where we are without each and every one of them.

Our team of bakers, decorators and customer service staff are dedicated to making the most beautiful and delicious creations you can imagine. We have consistently won The Best of Awards from the Knot and Wedding Wire and have worked hard to build our reputation for quality desserts for all types of events. We have a great relationship with some of the best venues in town and have earned our way on their preferred vendor list.

We bake everything in house and take great care in the delicious sweets we provide to our customers.

How did you become a wedding baker?

Our current bakers are Alexis & Joe and they are doing a great job of rocking out cakes, icings, fillings, cupcakes and all the delicious desserts we carry. Alexis did her externship with us from the Bradford School and has been with us ever since. Joe found his passion in baking after becoming a nurse and we are grateful for his diverse background. We bake everything in house and take great care in the delicious sweets we provide to our customers.

With our business there are a wide variety of items we make and bake. We make cakes, cupcakes, fillings, icings, cookies, pies, cheesecakes, brownies, lemon bars and dessert bar options for those who want variety and something less traditional. Our bakers are required to do a lot of weighing, scaling and math as baking is a science! Precision is a must in our business if it's not right we may have to start over.

Where can I find the best options for wedding cakes?

In this day and age the internet, Instagram and Pinterest offer a wide variety for brides and grooms to search for options. It is helpful if they have seen designs already that they like so we can get an idea of the style they enjoy. We can always put our own creative spin on a design if they are looking for something more unique. The possibilities are almost endless in this day and age. Of course this also takes your budget into consideration. We are creating a work of art with every design whether simple or complex.

Are there things that differentiate wedding bakers?

Of course as we all make, bake and create our products differently. You could order a chocolate cake from 10 different places and have 10 different products. We like to make a statement with the height of our cakes and they are typically taller than most other bakeries in town. Attention to detail is at the top of our list when we take on a project. It isn't how fast can I get it done, although speed is a factor, it is how does the final product look. We are going for clean corners, precise decorations and an overall beautiful design.

How do you know you're talking to a good one?

I think you can base that on a few factors:

  • First being how did you like the taste of their product? You have to love what you are eating in order to want it as THE dessert at the most important day of your life!
  • What type of reviews do they have? Of course everyone has an off day or a client who might not have been the best fit, but overall are other people satisfied?

What should brides ask when deciding between several options?

They should have in mind about how large or small of a Wedding cake they would like and what their budget is in the end. We can create a large 6 tiered grand Wedding cake if that is your heart's desire, but can also scale it down to a simple cutting cake and cupcakes for guests. This is your special day and you are free to customize it however you want. No one is going to leave your reception because you don't serve their favorite cake. Choose what you love most! You can also have several flavor options for guests to choose from if you want to variety.

We also had a Dungeons & Dragons themed Wedding cake last year that had a 3D dragon crawling around the cake with gold coins.

What is the fanciest dessert you have produced for a wedding?

I think the elephant cake mentioned below is one of the fanciest designs we have ever created. We also had a Dungeons & Dragons themed Wedding cake last year that had a 3D dragon crawling around the cake with gold coins. The dragon was made from modeling chocolate and had cake lace wings. It was amazing and the bride and groom were in love with the design.

What is your favourite cake flavor?

My favorite cake flavor is chocolate cake with rich chocolate ganache. Our ganache is velvety, creamy, decadent and delicious! Of course I can understand not everyone is a chocolate lover though. Our most popular cake flavor is our vanilla bean. It is light and fluffy with a hint of vanilla bean and it pairs well with everything! We use vanilla bean powder to knock it to the next level of amazing. Vanilla bean is most commonly combined with a filling of raspberry jam or almond cream.

Megan has created some very amazing cakes for birthdays. Here's a recollection from her: Alice in Wonderland cake from November 2016.

What are some of the coolest cakes you have ever seen?

Some of my favorite cakes we have created have been floral designs. From hand-painted brush designs to layers of buttercream flowers covering the cake in different styles and colors. Megan has created some very amazing cakes for birthdays. Here's a recollection from her: Alice in Wonderland cake from November 2016. We were given a sky's the limit birthday cake for one our customers. She has a themed party every year and we've created her cake for 4 year's of celebrations. I sketched a design out and worked on the planning and execution of it for week's before the party. It was truly a masterpiece topped off with a suspended tea pot! ~ Megan Anderson We love to follow many bakeries throughout the US and world on social media platforms to learn more as we can. We have taken classes from a few different locations in the past too.

What are the typical services/packages offered by wedding bakers?

We offer a wide range of packages to fit everyone's style and budget. If you simply want a small cake to pick up since you are having an intimate reception and want to keep things simple we can happily accommodate that. If you want a sky's the limit tall tiered extravagant designed cake to truly WOW your guests we can make that happen too.

Our prices for buttercream decorated tiered cakes start at $4.50 per serving and increase depending on the level of detail. A simple four tiered Wedding cake runs about $600 and gives you 125 servings. We do offer a complimentary Anniversary cake on your 1st anniversary.

I love fresh cake and wold love our clients to have them same choice too! We are happy to provide a box if you would like to save your top tier and follow tradition. We also offer sheet cakes if you want a smaller cutting cake and sheet cakes for most of your guests to save on costs.

I would say one of the most challenging designs for a Wedding cake we've made was in December 2018.

What was the most difficult request you have handled?

I would say one of the most challenging designs for a Wedding cake we've made was in December 2018. It was a tiered square cake with a 3D standing elephant made from cake on top. The elephant required a special structure inside that we had to create from screws and wooden plates to give the body and head support. It was all covered in a maroon fondant with detailed hand piping on all of the cakes. After the piping design dried, it had to be hand painted gold to match the theme. It was stunning! Our team really had to work closely together to make this bride's dream come true and I'm happy to say we did make it happen.

Was there ever a time you had to improvise?

Of course, who hasn't?! One of the most common issues is that flowers may not be available to put on the cake when we arrive. Sometimes that is due to an order not being placed or a florist may have forgotten to include them. We are great at picking small pieces from other flowers that are on the tables or in other arrangements if needed without anything looking out of place. We work closely with other vendors to make sure details are taken care of for our guests. Having a close connection with florists, photographers, disc jockeys, caterers, venues and even other bakeries can help us out of a tight spot when needed. I do believe in collaborating together even with other bakeries who provide cakes and desserts. We may not be the right fit for a client for one of many reasons and that's ok too. We like to recommend other small business vendors so we can all have more of a chance at survival against the large corporate places. We are stronger together.
